Lita's Salad
This is my favorite recipe - it came about with our
First tasting of Powell Butte Blend our very first vinegar
blend.
1 - Apple or Pear - thinly sliced (use one or the other)
Lark Gardens vinegar - Powell Butte Blend - or any of the
others
(each add a slightly different flavor)
Mix Apple or Pear with a good splash of vinegar to moisten
fruit. Set aside.
Candied Walnuts or Pecans
1 large Handful of either nut
1 Tbsp. butter
¼ cup sugar
Melt butter , sugar and nuts in a small frying pan. Bring to
carmel stage, stirring to coat the nuts.
Spread mixture on a sheet of foil to cool. When cool - break
apart into small pieces - and set aside.
Crumbled Blue Cheese to taste
Salad Greens - 1 good handful per person
1 to 2 tbs of very good Olive Oil (this is optional)
Fresh Ground Pepper - a good couple of grinds
Mix greens and oil (if being used) add fruit with the vinegar
it has marinated in - add cheese - and candied nuts and another
couple of grinds of the pepper mill.
It is best to mix this salad with your hands. This helps get a
nice coating on all leaves.
